Happy love day :) When I was younger I hated Valentine's day with a passion. But I guess when you don't have boyfriends or get flowers on Valentine's day it would make you hate it huh? Well now that I'm married I love this day!!! Now granted most years we don't do anything but spend time with each other...but I have someone I can share the day with and get all mushy. So what's not to love. So speaking of things I love (besides my family and friends of course):

It's been one year being gluten free

It's been a good year. I feel better and only miss a few foods I can't have now. This diet has helped me eat healthier than I ever have. Now that doesn't mean I don't eat my share of junk food, because I do. But it's a lot less than I did before. I also cut down on the amount of processed food I eat. The only down side is I have to cook all the time if I want to eat, lol. I don't like cooking...

I've also tried a lot of new foods that I never would have, had it not been for this diet. Here's a list of stuff I've tried:

turnips (not really a fan)
spinach
plums
hummus
zucchini
cooked broccoli
Quinoa
clementines
blueberries
almond yogurt
avocado
adamame
fish
cilantro
sweet potatoes
kale
mayo (couldn't stand it before)
black bean brownies
alfalfa sprouts
eggplant

That's all I can think of, but I'm sure there's more.

Things I want to make this year include:

Cinnamon rolls
Nilla wafers
lemon puppy chow
corn tortillas
olive garden's bread sticks
Krispy Kreme doughnut cupcakes
corn bread

Hubby has been such a wonderful help. He took some of my favorites and made them gf.

Red Velvet cheesecake
chocolate chip, coconut, oatmeal cookies
boneless chicken wings
sandwich bread

Plus he buys me stuff like pasta, cookies, and anything else he thinks I'll like. What a great guy.

Hope next year will be just as good. Now if I only I could give up dairy....

GF flour tortillas

I don't remember where I got this recipe but I will admit it's pretty good. I'm just not very good at rolling them out.

2 cups better batter gluten free flour
1 tsp baking powder
1⁄2 tsp sugar
11⁄4 tsp salt
2 TBs vegetable or other shortening (I used palm shortening)
3⁄4 to 1 cup warm water

1. Combine all of the dry ingredients, then cut in or work in the shortening using a pastry blender, the blade attachment on a kitchenaid or even just with two forks. I use the kitchenaid paddle attachment and it works just fine. Once the dough is sand consistency...

2. Add the warm water, starting with 3/4 cup and mix well.

3. Continue to add water until a soft, cohesive dough is formed.

4. Heat a griddle to medium heat. Then, form a ball of dough into a flattened disk, cupping the outside edges a bit to form a round.

5. Using a rolling pin, roll into a round disk about 1⁄8 inch thick and about 8 inches in diameter or to your preference. I used a little more better batter on my surface so they wouldn't stick.

6. Cook one at a time on a hot griddle until the surface bubbles. Turn only once, the first side should have brown flecks.

7. Bake until the second side has slightly browned – shouldn't take too long.

8. Keep warm in a tortilla keeper or wrapped in a cloth until served.
You can also store in an airtight container in the fridge for up to a week.

Just reheat like you would regular flour tortillas.

I'm not sure how I feel about her statements on dietary restrictions in this article... But I guess she's right "Everyone can miss a meal." But to be honest I don't like being the only one not eating, but I also don't like being a pain in the ass for my host either. But thankfully I have great friends and co-workers that usually take inconsideration what I can't eat (NOT what I won't eat, there is a difference).

I've never really liked Martha as a person, you know what I mean... But I think her take on allergies and dietary restictions makes me like her even less.... Just thought I'd throw it out there.

Okay so I've slacked on working out for about 4 years now. I'm older and weigh about 15 pounds more than I did back then. I stopped working out because hubby and I went to Guam for a month to visit family, then I never got back into it. Bad I know! But that is about to change... I'm buying new cross-trainers tomorrow (I don't have any to work out in). Let the working out begin. Because I so want to look like the woman above... I mean damn look at those legs!!! Plus I need a way to relieve stress, I need to feel better about my body, and I'm eating better now with my GF diet than I have my entire life. So it's time to get off the couch and follow my hubby's lead and get to work. Wish me luck, I know the first few weeks are the hardest.

Another chili recipe sort of, try this black bean chili salad. I would add chopped jalapeno to add spice.

No-roll Mexican Rice Enchiladas are easy and good.

I didn't want to use goat cheese, so I adapted this recipe to make it my own. I used mozzarella and spinach with the other ingredients.

I've tried Parsnip Fries but to tell you the truth I didn't like them baked. So I deep fried some and they turned out great. But you can try them however you want.

I love tacos so I've been trying all different types. Chickpea tacos are pretty good. At first I wasn't so sure but they turned out to be pretty good.

I love minestrone soup. It's wonderful to eat during fall and winter with a piece of garlic bread, yum!

I've had a cold the last 4 days so it's the little things that have made me happy this past week.

First is this crazy yummy chocolate milk. I can't drink cows milk so I use Almond milk for just about everything. But I really can't stand to drink it plain. I really do miss having a glass of milk with chocolate chip cookies. But because I can't have that I've found something better. The name says it all.....so delish!!!!

Second is my Nook color, I love this thing. It's the best, I've had it for months but I just love it so much.

My Dad got me these for my Birthday. My Step-Mom helped me pick them out, I love them. So comfy and they remind me of home every time I put them on. Just looking at them makes me smile. Silly I know, but I'm still a southern girl at heart.

These things are freaking addictive. If you haven't had the wild berry frosty shake at Wendy's then you don't know what you're missing. At first I thought it was just okay, but the next thing I knew it was all gone. I must have drank my first one in five minutes flat. Now I'm hooked....there could be worst things to be addicted to.

Last but not least, True Blood. One more episode.....then I'm saying good bye to HBO until next season.

The old fashion rule 'don't wear white after labor day' doesn't really apply now days. Or at least it shouldn't. Who cares what color you wear and when? I know I don't care, I love wearing light colors so I wear them even during winter months. You can judge all you want, it won't phase me ;)

So I've come across several blogs that do this and I thought it was a cool idea. Don't eat meat on Mondays. Other people have their reasons for going veggie for a day, I don't. I just like eating vegetables. I know! I've made major progress in this department. Now I might not always eat just veggies on Monday, but I do go meatless once a week (sometimes more than once a week). I just never know which day it will be, it usually depends on my mood.

I'm going to post recipes I've either tried and loved or some that I want to try. I figure if you want to join in I'll just give you some inspiration :)

First one up is from Kalyn's Kitchen, Pinto bean salad. Let me tell you it is so yummy. I love this stuff, and so does hubby. So win, win. I know it's more of a summer thing, but to tell you the truth I don't pay attention to that sort of thing. I mean I eat chili in July....I eat what I like. Anyway, I hope you like it.

I've been drinking a lot of smoothies lately, ever since Hubby got this blender from Costco. It's amazing! It's also a good reason to have pina colada and margarita parties. Pina Colada party was already a success... But that's not what we're talking about right now.

Smoothies, yummy and healthy. I'm starting to drink green smoothies, I know they are weird at first but you can't even taste the spinach or kale. So here are a few links to get you started. Don't worry you don't need a fancy blender, it just makes it easier.

What's the big deal?

So I've been gluten free for 3 months. I can't even describe to you how much healthier I feel, or how happy I am to finally feel normal again...

But that being said, I've had some annoying conversations with a few people. I know people have the right to their opinion, but until you've been sick for 6 1/2 years-without doctors figuring it out or even caring.... you have NO idea what it's like. So no I haven't offically been diagnosed with celiac disease or with a gluten sensitivity, if I waited on doctors I would still be ill. It takes an average of 10 years to get diagnosed, NO THANK YOU!!! The GF diet has helped me so much. So who are you to say I shouldn't be on this 'fad' diet?!?!?!?! FYI it isn't a fad at all, so get over yourself and do some research before you tell me what you think.

Sorry I'm done ranting about that.

One of the things that has been a major learning experience is grocery shopping. Looking at labels, figuring out if it really is gluten free or not, and wondering if cross contamination is an issue. The labeling laws right now aren't cutting it. Celiac disease isn't a joke, it might not kill you instantly like a peanut allergy would. But it causes so many other health issues that you could call it a silent and patient killer. I won't go into all that, you can look it up yourself if you care. My point is the FDA needs to take this seriously and make strict labeling laws when it comes to gluten.

If you could sign this petition, or send a letter to the FDA, also tell anyone you know. Maybe just maybe things will change.

So to summarize, no I haven't had some quack tell me I have celiac or that I'm 'sensitive' to gluten. (I don't have much faith in doctors) But I could care less about that. My body told me I was poisoning myself and it didn't like it. So now that I've been gluten free I finally feel normal. I won't go back no matter how yummy normal cupcakes may look. Because let's be honest, when I see normal gluten containing food, I see how I would be after I eat that stuff--- me crunched over wishing the pain would stop. It's just not worth it to me or my body. I'm not saying I don't miss it, I do at times, but no thank you.

So please visit the link above and help the 1 in 133 people that do have celiac, and 18 million Americans that are sensitive to gluten......and people like me. Thank you for your support :)

I've been following this family's story for awhile. Sometimes I've cried reading her posts. I can't even imagine going through all they've gone through. But finally after several months this has happened and I couldn't be happier for them.

I love books, that's what it comes down to. I would rather snuggle in a comfy chair and read a good book than have a night out on the town. Maybe I'm just a home body...I don't know. I've been slow getting my sewing projects done. I guess I'm just not good at juggling my hobbies. Here are a few I've finished.

This is not Buster. Not sure where I got the photo. But it's super cute.
I know it's been along time since I've updated, sorry.

So things have been going good.
A few things I've learned:
1. Godfather's gluten free pizza is horrible. I haven't really found a great pizza yet.
2. Making your own bread is great. It tastes just like real bread.
3. This diet makes you try new things. I've found it fun to try new recipes.
4. Co-workers, and friends will let you know when they find gluten free items. It cracks me up when it happens. I'm thankful because I get to find new products through them.
5. Now when people bring snacks to work they bring stuff that I can eat. So very thoughtful.
6. Don't eliminate things from your diet just replace them with gluten free items.
7. Plan, plan, plan. I have to make a meal plan every week now. I can't just grab something from a drive thru like most people.
8. I don't have dandruff, I was just allergic to my shampoo and conditioner.
9. I can have Starbucks caramel macchiato, so happy about this one. Oh and sonic butterfinger blast.
10. P.F. Chang's rocks!!! Not sure why we haven't eaten there more often. But they have a great gf menu and super knowledgeable staff.

Not this and Not that

Well since my last update I've had a few ups and downs.

Day 6 hubby and I went to Bonefish Grill with some friends. I know restaurants are iffy. But they have a GF menu. Unfortunately I got gluten-ed. Not sure what happened, the only thing I can think of that might have been a problem...besides cross contamination (if that happened)...I had to have a side that the waitress said was GF. But it wasn't on the GF menu...so who knows. Maybe in a few months I'll try that restaurant again but I'll be a little more assertive. I know now I shouldn't have just believed the 'other' side was gluten free. Lesson learned.

Day 7- went out with my bestie, Brandy, for her Birthday. We went downtown to Starbucks to hang out. I asked the manager if they had anything to drink that was GF. She stated she didn't want the responsibility of telling me what was or wasn't GF. So I just had a bottled water. I totally understand her dilemma, so no coffee for me :(
Then we went to the south union bread company for lunch. Well you can imagine the problem just by the name of the place. But hey it was the Birthday girl's choice. So I got a salad that wasn't too bad. Thankfully one of the employees found out whether or not they had salad dressing that was GF. I really did appreciate her finding out.
Then we went to the mall to watch Black Swan (didn't like it) but we had some time to kill. I was starving so we went to the food court. Yeah, let's just say I wish I'd packed some snacks. Nothing at the food court would have worked, subway, pizza and such. Panera Bread was there and I know they have fruit so I thought that would work. When I asked an employee about GF stuff she got the manager. Well he was a total jerk. He just flat out said no, I tried to ask about fruit but he said no and walked off. So I went to Cheesecake factory and repeated the routine. Thankfully they were really great. The waiter helped me order and was very helpful. Crazy day...but I didn't get gluten-ed, so that's great.

On day 12 now and so far so good. The only thing that is kind of annoying is feeling like I'm always hungry. I guess that's better than not feeling up to eating, that's how it was before....

We have a Super Bowl party to go to and we're suppose to make appetizers. Hubby is making salsa and GF oatmeal chocolate chip cookies. I'm just wondering what else I'm going to be able to eat. I can see how this is going to run my life. I don't really mind, but it is kind of depressing to think of my favorite things I can't have now. For example corn dogs, funnel cakes, oreos, french toast and chocolate covered cherries. But I guess that's all junk food so really it's better not to have them huh?

Gluten Free

So anyone that knows me knows I've had stomach problems for around 6 years. I've been to several doctors, problem still not fixed (don't get me started). I went to my family doctor for a different reason then asked him what he thought about my other symptoms. He said he wasn't a GI doc but thought I had a wheat allergy or celiac disease. He suggested I start a gluten free diet. I was thinking the same thing but hey I'm not doctor....

If you aren't sure what a gluten free diet is...it pretty much means I can't have wheat, rye, and barley. There are a few other things but they have long names and you get the drift. Wheat is in EVERYTHING, like soy sauce, hot dogs, salad dressing, herbal tea, flavored coffee, and so much more.

I'm on day 5 of this crazy diet. I won't say it's been easy, but it hasn't been too bad. I just have to remember to check labels. I had a slip up on day 2 due to not looking at the label, fyi- beano has wheat in it. The good thing is I have to eat more fruits and veggies they're naturally gf. I have tried several gluten free products so far, here's a few I like.

These in smoke house flavor are sooooo good, they taste like bacon. I eat them with cheese, so yummy.

Hubby made some banana nut bread using gluten free flour. It taste exactly like regular banana bread but without the stomach cramps.

Okay at first I didn't like the brownies. But after you have a few bites it grows on you. Now I really like them.

I'm kinda scared to try bread, I've heard it tastes like sawdust. I've had a rice tortilla and it was okay. I've found a few blogs to follow and some recipes to try. We'll see how it goes. So far I haven't had stomach cramps, usually I have them all the time. I'm so happy about that. I still don't feel 100% normal yet but hopefully I will. I've heard it will take a few weeks to see a real difference and several months for me to heal.

Hope everyone is having a great Thanksgiving. I'm very thankful for my wonderful hubby. He got up early today and made a Thanksgiving feast for us. He didn't even wake me up so I could help. I woke up to the smell of yummy turkey....what a man huh?!?!?!?! I love him so very much and am glad he's in my life. Not just because he cooks for me either ;)

This year on my Birthday we went to Sea World. It was the best day ever! We got to touch and feed dolphins, stingrays, a shark, a penguin, and sea lions. We had a blast, totally recommend the private tour. We also went behind the scenes, very cool. Here are just a few photos from that day.

To me it wouldn't be October without horror movies. I have to admit I love them.

I love yelling at the screen, well at the dumb naked/half naked bimbo about to walk right into trouble. I love that feeling you get when you know something horrible is about to happen. You know the feeling,right? Your heart rate rises, you start getting tiny beads of sweat on your upper lip, you grip your chair so hard your fingers hurt.... You don't know if you want to cover your eyes or keep watching so you don't miss a single crazy minute.

Then after the movie you can't sleep for a week because you see serial killers in the shadows. But hey that's the price you pay for the rush. For those of you that don't like scary movies (you know who you are) it's cool....just go see some heart felt holiday movie. Fair Fun

So I've lived here for 7 years and have never been to the fair. I know, crazy. But I was determined to go this year, but hubby didn't want to go. So I enlisted some friends to go with me. My friend Ellen wanted to go to the Sheryl Crow concert, Colbie Caillat opened, so yeah I wanted to go. Plus I wanted fair food, it's the best part right? Well here are some photos of our adventure. I know I'm pretty late in posting these....I'm a tad behind.

Okay so apparently military style fashion is the 'in' thing. I really wish I'd known this was going to happen. I might have told Hubby to keep my Air Force camo. But no such luck, he threw that all away about 6 years ago. Ah oh well, you know now that I think about it this 'trend' comes around every year.

Just so I'll be one of the cool kids.......I did manage to pick up a green 'Army' inspired jacket at Goodwill for $3, not too shabby. So you'll be seeing that soon. Until then here's some military inspired fashion.

project. Well this really wasn't the first project for the class. But LA wanted to give us something fun to do before class started. So this is my new, cute and functional pin cushion. I mean how cute right?!?! LOL, well I love it plus I used an old shirt that didn't fit me anymore (the yellow fabric) but I still loved the pattern. I didn't want to give it to Goodwill so I've kept it for a few years. Good thing I did huh?

Well the next project I will attempt is two-sided napkins....wish me luck.

Sew much fun

So I'm taking this sewing class online. I debated taking it. But finally broke down and signed up at the end of July. I'm so glad I did, I'm so excited about it. I sorta know what I'm doing.....okay no I don't. I remember taking a few home ec classes while in middle school and high school. But to be honest I really don't remember anything. Well besides putting regular sugar in my brownies instead of powdered sugar. Yeah I know crazy huh? Don't worry I know how to make brownies now, LOL. Anyway, I really hope I learn a lot from this class. Plus it's taught by such cute chicks, Rachel, Courtney, and Leigh-Ann.

My bff (Brandy) is awesome when it comes to sewing and just about everything else...But she's a busy girl, she doesn't have time to teach me, plus I wouldn't ask her to do such a thing. I KNOW I'm a bad student. I get crazy frustrated with myself. But when I do have questions I know she'll help out, won't ya hon? LOL.

I'll keep you updated on my projects and progress through the class.

Okay so I don't normally wear much jewelry. My wedding set, ALWAYS! But I rarely wear anything else. I do have cute costume jewelry but don't wear it that often. To be honest I totally forget I have it. I have a small jewelry box I got in Japan that sits on the floor of my closet. So you can see were I would forget about it right? Plus Most times when I'm getting ready for work I'm running behind so I don't have time to put makeup on let alone accessories.

But that being said.....these items make me want to wear more jewelry.

I want this ring, like right now!!!! I think I would wear it EVERYDAY! The price is nice too.

National Balloon Classic

So Sunday I went to the National Balloon Classic with some friends/co-workers. I had a blast! Although I didn't get to ride on one I still had a lot of fun. I'm not sure how many balloons there were but they flew from 6:30-8:00. All different balloons, way cool. Some of them came right over us, so close you could read the pilot's shirt. I felt like a kid again.

I even got a corn dog...not so good. But my funnel cake was wonderful!
